Piez is a little family pizza outfit rolling out of Boynton Beach. The whole thing runs on fire — and we're picky about ours.

Our wood is Australian pine, an invasive tree we clear through the family's tree business, then split and season by hand. Fresh-cut wood, a screaming-hot oven, and an 11-inch pie that blisters in about a minute and a half.
